New Zealand Sole - Whole

- Average Weight: 300-500gm
- The upper flesh is slightly darker than the underside flesh, but both have delicate texture and whiten on cooking.
They have rough green-grey scales above and white underneath. The mouth is visible from the blind side and is concealed by a rostral hook. Soles are caught by trawling all year round, with the main season from October to March.
